Not only is the Berry Avocado Spinach Salad perfect for all your spring and summer gatherings because of all the beautiful colors but it also tastes outstanding.  The combination of fruits, veggies and out homemade Balsamic Vinaigrette Dressing is perfect and it taste amazing.  I honestly didn’t care much for berries in my salads until I made this recipe. It’s one that all my fellow salad lovers should try for National Salad Month!

Berry Avocado Spinach Salad with Balsamic Vinaigrette Dressing

To make this yummy Berry Avocado Spinach Salad and Balsamic Vinaigrette Dressing follow the below directions:

For the Balsamic Vinaigrette Dressing you’ll need the following ingredients:
  • ½ cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons sugar
  • Salt and pepper to taste
For the Berry Avocado Spinach Salad you’ll ne3ed the following ingredients:
  • 8 cups raw spinach (loosely packed
  • 1 cup roman lettuce (chopped)
  • 1 – 2 avocado (seeded, peeled and sliced)
  • 1 cucumber (diced)
  • 10 fresh strawberries (sliced in half)
  • ¼ – ½ cups raspberries
  • ¼ to ½ cup blackberries
  • 1/4 to ½ cup feta cheese
Dressing directions:
  • First combine the oil, vinegar, sugar and mix together.  Salt and pepper to taste and set aside for later.

  • Cut fruits and veggies.
  • Arrange fruits and veggies in a large bowl.  Lightly toss, add ½ of salad dressing and toss again.  Add the rest of the salad dressing, toss again and serve.

Ingredients

  • Balsamic Vinaigrette Dressing:
  • ½ cup extra virgin olive oil

I could not find the comments box on your Twice Baked Potato Salad Recipe post. They look so good my sons would really love to try this recipe because they love black olives. It sounds like a recipe we will be trying real soon
