Easy Waffle Ice Cream Sandwich

Between you and I one of my personal favorite things to do while the kids are in school is spoil myself a bit.  Grabbing some nail polish, my footie supplies from Target and making me my very own Waffle Ice Cream Sandwich!  Oh yes, it’s GREAT!  Sadly, I don’t always have time to make myself a Waffle Ice Cream Sandwich, but lucky for me I can always grab one of Unilever’s super yummy ice cream bars!

  • Waffle
  • Cookie Cutter
  • Your Favorite Breyers Ice Cream
  • Chocolate (optional)

Let’s make it:

  • You can use the whole waffle to make your waffle ice cream sandwich, but I like to use a cookie cutter, so it’s not too big.  If you use cookie butter, find the design and size of cookie cutter you like and cut your waffle out suing the cookie cutter.  You’ll need two.
  • Place ice cream on one-half of the ice cream.  Push another side of waffle to create waffle sandwich.
  • Dip in chocolate, freeze for a bit and enjoy.

I have made homemade ice cream sandwiches using every kind of cookie before, but never a waffle!! This sounds so amazing, and I bet you could even yse flavored waffles as well! I also love the idea of dipping it in chocolate, yum!

I think it’s such a great idea to make your own ice cream sandwiches instead of buying them ready made. You save so much money by making them yourself, which is what I’ve been doing. Thank you for sharing this recipe, I can’t wait to give it a try.

Yum! Love waffles, love ice cream, love chocolate…so I guess this will be an instant favorite. I am going to try this, this weekend, with different ice creams and see which ones are the favorites.
