This New York Cherry Cheesecake recipe is delicious! It is pretty simple to make and the whole family will enjoy if they like cheesecake. To my surprise, it is not too rich. In my opinion, it is just right. My husband is a HUGE lover of cheesecake. Cherries as well! Now as I have mentioned before I am not a fan of fruits much, but I do like the flavoring and I pick my cherries off of mine when I make this dessert and still get the cherry flavoring.
Now I don’t know if you have ever made your own cheesecake, but this New York Cherry Cheesecake is definitely worth trying to make and enjoy. This is not your ordinary graham cracker bottom. This has Oreos in the recipe and oh, my is it ever so yummy! It makes this cheesecake, in my opinion, even more, delicious than an ordinary cheesecake.

- 8 oz cream cheese
- 8 oz ricotta cheese
- 4oz sour cream
- 2 eggs
- 1 tbs vanilla extract
- 1 tbs corn starch
- 2 tbs four
- 1 can cherry pie filling
- 12 oreo cookies
- 2 tbs melted butter
- 6" round spring form pan
- Place cookies in a food processor on pulse about 45 seconds
- Add in melted butter.
- Press into the bottom of springform pan.
- Mix together cheeses and eggs.
- Mix in sour cream.
- Add in corn starch and flour.
- Stir vanilla in.
- Mix well until all combined.
- Pour into spring form pan.
- Place 1 cup of water in the bottom of pressure cooker.
- Place spring form pan on trivet in the pressure cooker.
- Cook on high pressure for 40 minutes.
- Do a quick release.
- Remove and completely cool about 1-2 hours.
- Top with cherry pie filling and enjoy.
