It’s that time of year, let the fall baking begin!  The girls and I decided to start our fall baking off with this yummy Rolo Stuffed Chocolate Cookies recipe!  And, let me tell you there was no better way to start off the season than with this recipe.

My girls not only loved the recipe but loved helping me make them, which yes means there was quite the mess to clean up afterward.  Let’s just say baking and kids are fun, but you can always count on there being a mess afterward.  That’s half the fun, right?Thankfully, we had our new Libman Company Wonder Mop to help with cleanup afterward.  Which the girls were actually excited to use and did a fabulous job cleaning up while mom got to sit back and relax.  That never happens in my house, lol.

To make these yummy Rolo Stuffed Chocolate Cookies, you’ll need the following ingredients:

  • 2 1/2 C flour
  • 3/4 C unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 C white sugar
  • 1 C packed brown sugar
  • 1 C unsalted butter, room temp
  • 2 tsp vanilla
  • 2 eggs, room temp
  • 1 bag Rolo candy

Rolo Stuffed Chocolate Cookies RecipeFollow the below directions to make this Rolo Stuffed Chocolate Cookies recipe:

  • Preheat oven to 375 degrees. Line a cookie sheet with parchment paper.
  • Whisk together flour, cocoa powder, and baking soda together in a bowl. Set aside. Using an electric mixer beat both sugars and butter in a large bowl until smooth and creamy. Add vanilla and eggs; beating well. Slowly add flour mixture, add one tablespoon at a time, stirring well into sugar mixture and egg mixture. Place the cookie dough into your refrigerator for about 15 minutes.
  • Next, using a small ice cream scoop make the cookie dough into small balls. Then place a Rolo candy into the center of the cookie dough ball.
  • If your dough gets the too sticky return it to your refrigerator to harden up slightly.
  • Place each cookie ball onto the lined cookie sheet, about 2 inches apart.
  • Bake at 375 for 7-10 minutes or until the baked cookie is slightly cracked. Allow the cookies to cool on the cookie sheet for about 2 minutes. Then transfer cookies to a wire rack to cool completely.

Okay, so back to the mess!  In my house, the worst thing you can have is children and flour, lol.  I walked out of the room for five minutes and came back to a small flour fight.  I’m not sure what it is about flour, but even when I was little, it was almost impossible not to make a mess when I was helping my grandmother bake, lol.

Vayda and Mattie were super excited to put our new Libman broom and Wonder Mop to the test.  It’s not very often they’re eager to clean up their own mess lol.  Typically I have to chase them around for an hour while they pretend to have to use the bathroom and have a million other things they need to get done before they can start cleaning.

Rolos are one of my all time favorite candies, so of course these sound absolutely amazing to me! I definitely can’t wait to try making some with my kids, thanks for sharing! One question I do have about the recipe though, do you form the cookie ball around the Rolo? It just says to form balls and then put Rolo in center, so just curious exactly how to do it. :)
