Until recently making things like this Southwest Breakfast Cast Iron Meal for my family often resulted in leftover veggies going bad.  It’s hard to use all your veggies in such a short period of time, it is for me anyway.  Green onions used to always go bad in my house.  I only needed to use two or three but you have to buy a bundle.  Thankfully I discovered Rubbermaid FreshWorks Produce Savers!  They are a veggie’s life saver if you know what I mean lol.

Southwest Breakfast Cast Iron Skillet Recipe

To make this southwest breakfast you’ll need the following:

  • 1 bag frozen hash brown potatoes
  • 4 eggs, room temp
  • 1/4 cup caramelized garlic
  • Salt and pepper, to taste
  • 1 lb bacon
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 green onions (diced)
  • 10 cherry tomatoes (more or less to your liking)
  • 2 Jalapeños diced and seeds removed
  • 1 cup Shredded Cheese
  • Cooking spray

Let’s make our Southwest Breakfast:

  • Spray your cast iron skillet with cooking spray, heating it to medium to high temp.
  • Add the bacon, garlic, peppers, onion, tomatoes and fry until crisp, remove the mix and place to the side
  • While the bacon is cooling, pour off some of the bacon grease.  Leave enough to fry the hash brown potatoes on medium to high heat.
  • Once almost cooked add you bacon pepper mix and fold to combine
  • Make four pockets and crack one egg into each one
  • Top with the shredded cheese allowing the eggs to cook completely and the cheese to slightly melt.
  • Cover to thoroughly cook the egg to the desired doneness
  • If desired add the diced jalapeno pepper on top for garnish.
  • Serve with salsa and or sour cream as desired.

Ingredients

I bet these would be great for storing those little carrots that come in a bags from the grocery store. There is always water in the bag that ends up making a mess in my refrigerator, but I don’t know how else to store them!

I buy green leaf lettuce in these tubs from the grocery store. They stay good for weeks, but they cost twice as much as buying the lettuce whole (not in pre-washed and cored in the plastic bin). I bet these containers would allow me to store my lettuce as long and spend half as much.

I used part of an onion this evening making dinner. As I went to store the other part of it, I thought of these containers and wondered if they would make this easier/better. One of the many produce items I don’t know how to store :-(

I like to buy a head of garlic and peel it. I usually store them in zip top bags, but I’m sure that’s not the best way to do it. I don’t want them to sprout. I bet these would be way better for storing them.

I’ve heard you’re supposed to keep cucumbers on the counter, but after I cut them, I feel like they need to be refrigerated. I put them in a storage bag and they always get mushy. Hopefully these would keep them fresher, longer.

I would love to try these. now that it is mostly just Hubz and me at home, keeping fresh produce is a real problem. A whole box of strawberries or whole head of lettuce can be too much. And cut fruit salads with canatlope and watermelon–even those little “personal” melons–is way too much. I would love to have a few more days on those things.

I would love to try these new Rubbermaid containers to see how much longer all of the summer melons and berries stay fresh. Over the years, we have wasted so many of the berries I love. I hate that weird white fuzzy stuff that covers fresh berries in just a few days. I have heard amazing things about Rubbermaid’s updated technology and can’t wait to try them.

I’d save a bunch on salad greens because I am always tossing out salad because it wilts or disintegrates before we use it all. Also, unless the tomatoes are cut, do not put them in the fridge, they don’t require refrigeration ;-) I love using fresh products but it’s a race against the clock to use them before they spoil.
