I have to say since I have been on my diet all I want is sweets. Isn’t that the way it always works? I figure if I cannot eat it, might as I will find something fun and cook it or bake it for my beautiful family. I love to cook and bake when I have time. I cannot wait until I’m not working 10 hours a day six days a week so I can do things like this for my family more. The deserve to have a mom that is always up to no good in the kitchen because she has nothing better to do, lol. Okay, that could get a little dangerous if you know me.
It’s a good thing I have my blog. The last time I had to much time on my hands I almost burned down the house with a cherry pie, lol. Not that I was doing anything wrong, just doing WAY to much at the same time. I don’t idle well, in case you didn’t gather that about me already.
I couldn’t wait to share this cupcake recipe with you! It’s for All-In-One Cake and Frosting Cupcakes. Yes, I said all in one. Sounds pretty stinking awesome doesn’t it? That’s because it totally is.
When I first started reading her recipe All in One Cake and Frosting, WHAT! To be honest, I had no idea that was even possible… Good news it totally is, and that picture you see at the top of this page. That’s the All-In-One Cake and Frosting Cupcakes! Now tell me that doesn’t look super yummy too.

All-In-One Cake and Frosting Cupcakes

Ingredients
- 6oz cream cheese (softened)
- 1 cup butter or margarine (softened)
- 2 teaspoons vanilla extract
- 2lb Domino® Confectioners Sugar
- 2/3 cups milk
- 4 Large eggs
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2/3 cups water
Instructions
- Grab yourself a large mixing bowl. Now beat cream cheese, butter and vanilla extract together on medium speed until it's nice and smooth.
- Add Domino® Confectioners Sugar, alternately with milk, beat for 1-2 minutes or until blended.
- Remove 2 1/2 cups of frosting and place into plastic sealed bag. Set aside, you will use this again later.
- Now add eggs to remaining frosting and mix on slow speed until blended.
- In another bowl, add flour, baking powder and salt.
- Add your flour mixture to the frosting and egg mixture alternately with water. Continue to beat for 1/2 minutes or until it's nice and blended.
- Line up your cupcakes pan with liners and fill each one up with about 1/3 cup of mix
- Place in Oven and bake for 18 to 20 minutes, until they are slightly golden brown on the top.
- Place your mixture into medium sized bowl
- Place your icing mixture into a medium sized bowl.
- Now add more powder sugar, 3 cups to be exact. Now add 1/3 cup of vegetable shortening
- Mix until nice and smooth and icing will stand at a peak.
