Breakfast Ideas: Cheesy Breakfast Potatoes and String Cheese Scrambled Eggs
Cheesy Breakfast Potatoes and String Cheese Scrambled Eggs My sister has been staying with me and she makes some pretty darn amazing Cheesy Breakfast Potatoes! It’s something we have always had on Christmas Eve morning so she kind of spoiled us and made it early so I figured I would share it with you. I hope you like them as much as we do. Oh, and the Strong Cheese Eggs, that’s an everyday thing Mattie loves!
String Cheese Scrambled Eggs
Mattie’s favorite and fully invented by her when she was 2 1/2 years old! We love using Sargento String Cheese for our eggs… It makes it super cheesy! Ingredients If there is anything my youngest daughter loves its string cheese eggs! Whenever I ask her what she wants for breakfast I already know what she is going to say.
- 3 Eggs
- 1 Sargento String Cheese
- 1 tablespoon milk
- Salt and pepper to taste
Directions
- In a small bowl scramble eggs
- Place into a small – medium saucepan place eggs, milk, and 1/2 of string cheese pulled apart.
- Cook eggs until done salt and pepper to taste add other 1/2 of string cheese on top of hot eggs so it can melt.

Cheesy Breakfast Potatoes
Ingredients
- 2 tsbp coconut oil4 Medium Potatoes
- 4 Medium Potatoes
- 1 green bell pepper (chopped)
- 1 tomato (diced)
- 3 green onions (sliced)
- 1 tsp chili powder
- 1 tsp cumin
- 1tsp garlic salt
- 1 cup Sargento Shredded Natural Cheese (Mozzarella)
- salt and pepper to taste
- Boil potatoes until soft but still slightly firm on medium high heat.
- In a large skillet add oil and heat, then add potatoes, bell pepper, tomato, onion and cook turning frequently for 5 – 7 minutes or until peppers begin to soften.
- Add seasonings and cover to simmer turning every few minutes for 8 to 10 minutes or everything is cooked together well. If you’re wanting crispier potatoes cook longer, but be sure to turn.
- Add cheese and heat on low until cheese is melted.
- Salt and pepper to taste
