Gosh, I think of all the different Halloween recipes we have shared over the years. It’s by far one of my favorite holidays, and I enjoy baking all kinds of sweet treats, but I also try to focus on making sure my kids eat something besides candy, lol. It’s not easy, but someone has to make them especially before we head out for a night of trick-or-treating.
Since Halloween has become more of a season than a holiday that only lasts one night I wanted to share one of my kid’s favorite fall pasta recipes. I try to make something that will stick with them with protein and plenty of yummy veggies and my kids seem to love it, especially because things can still have that fun Halloween twist with NESTLÉ® PURE LIFE®.
To make this Chicken & Eggplant Skillet Pasta recipe you’ll need the following ingredients:
- 1 box of Penne pasta
- 3 boneless skinless chicken breasts
- 1 cup chopped squash
- 1 cup of chopped eggplant
- 1 cup of sliced mini peppers
- 1 cup of diced yellow and red mini tomatoes
- 1 can of fire roasted tomatoes
- 3 Tbsp. of Lemon pepper seasoning
- 1 Tbsp. of Crushed red pepper
- 3 Tbsp. of Olive Oil
- 1 tbsp. of minced lemon balm
- Cook your pasta as directed and set to the side
- Dice your chicken into small chunks
- In your skillet add your oil and chicken sprinkle with 1/2 of your lemon pepper seasoning and cook until done.
- Add your vegetables ( not the can ) to your chicken and cook until tender
- Add your can of fire roasted tomatoes and begin to add your cooked penne.
- Toss to combine
- Garnish with the rest of your lemon pepper, crush red pepper and Lemon balm.
Eating healthy and staying hydrated is important for our children! When my children are eating good and staying hydrated by drinking plenty of water I notice that they have more energy, can focus better and they tend to be in a better mood.
My daughter Vayda used to be one I had to remind about her water so anytime she comes and tells me she doesn’t feel good, hydration comes to my mind, and I ask her how much water she has been drinking. Now that she is a bit older I have not had to remind her nearly as much because she is old enough to notice that she feels better when hydrated. Plus, when Vayda is more interested in drinking water her little sister Mattie is all about drinking water to stay hydrated since her big sister is doing it lol. Which is great, that’s the goal, after all, to do the best we can to teach our children how to take care of themselves.
Since eating well and staying hydrated play an important role in our lives I do my best to make sure they are feeling top notch all year around, but especially this time of year. Gosh, I don’t know what would happen if one of them had to pass up trick or treating due to getting sick. Now I know it happens, and at times there is nothing we can do to prevent it but I also know if their body is hydrated they have a better chance.
As a mother, I love watching my kids get excited for Halloween.
