Chicken Fajita Alfredo Recipe w/ Barilla ProteinPLUS Pasta

WOW, this Chicken Fajita Alfredo recipe is seriously delish! Loaded with chicken, veggies, and a creamy Alfredo sauce, you can’t go wrong.

One of my favorite things about fajitas is all the veggies!  I love onions, bell peppers, and mushrooms, and I’m always looking for an excuse to put them in things.  Some of my kids don’t like certain veggies, but if I cut them up small enough, they don’t even notice.

Chicken Fajita Alfredo

You’ll need the following ingredients to make this Chicken Fajita Alfredo recipe:
  • 3 Large boneless, skinless chicken breasts (Cubed)
  • Salt, pepper, and fajita seasoning to taste
  • 3 tablespoons olive oil
  • 8 ounces Barilla Protein Plus Pasta
  • 1 green bell pepper (sliced)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 cup mushrooms (chopped)
  • 1 medium onion (sliced or diced)
  • 1/4 cup butter
  • 2 cups heavy cream
  • ½ cup grated parmesan cheese

To make the Chicken Fajita Alfredo recipe, you’ll need to follow the directions below:

  • Slice and dice veggies, cube chicken, and cook Barilla Protein Plus Pasta as directed on the box.

  • Add oil to a large skillet (I used to wok; you can use either) and heat.  Add chicken, add seasonings, and cook the chicken completely.  Add veggies to the chicken and cook on medium-low for about 7–10 minutes, turning occasionally.
  • In a separate pan, melt 1/4 cup butter, add cream, and bring to a boil. Reduce heat and simmer for about 3 to 5 minutes, or until it begins to thicken up.  Remove from heat, whisk in Parmesan cheese, and mix in with the chicken and veggies.

Finally got around to try this yesterday and thank you so much for sharing. I’ve made something similar before but this blew it out of the water.

What’s even better is that the guests couldn’t have it all so there’s leftover today!

I love all recipes with alfredo sauce! I’ve also tried the whole grain pastas and I think they are just great. Added protein would be a plus. I wonder how much of added protein our body can absorb though. I heard, even if you take 20 vitamin pills a day, our body disposes of 60% or more of it because it can not absorb manufactured vitamins. Something I never see mentioned very often. But every little bit helps and I don’t think the kids would even notice the difference between whole grain pastas and regular pastas unless you told them.

Alfredo sauce is notoriously unhealthy, but the veggies and extra protein help cancel out all that heavy cream! (because you still have to live, right?)
