Easy & Healthy Santa Fe Tilapia Lettuce Wrap

by Jenn

I recently made a super easy and healthy Santa Fe Tilapia Lettuce Wrap and fell in love!  It had a delicious flavor, and it was something I could feel good about eating, so much better than a burger or something quick.  Being able to make lunch for only me happens five days a week since the kids are at school, and it’s easier said than done in many instances.  However, thanks to Chicken Of The Sea® and their awesome Tilapia Select Fillets I can make myself something I feel good about eating.

I love that the fabulous people at Chicken Of The Sea® added flavored Tilapia to pouched seafood!  Have you heard or better yet tried the awesome pouches loaded with flavor?  I like all of the flavors but the Santa Fee Tilapia is my favorite and inspired me to make a delicious and healthy Santa Fe Tilapia Lettuce Wrap.  The best part is how easy it was to make!  Now that the kids are in school I’m all about easy and healthy lunch ideas that I can make for only myself and right now Chicken Of The Sea® Flavored Tilapia Select Fillets are at the top of my list.

I didn’t list amounts on the rice and veggies because that’s up to you.  I like a lot of avocado and cilantro, you may not.  Regardless the Santa Fe Tilapia Lettuce Wrap is super easy, tasty, and so much healthier than other easy lunch options out there.

You’ll need:

  • 1 package Chicken of the Sea Tilapia Select Fillets in Santa Fe Sauce
  • Romain lettuce
  • Cooked white rice
  • Avacado
  • Tomato
  • Cilantro
  • Lemon

So let’s get making it the Santa Fe Tilapia Lettuce Wrap:

1.) Open package of Chicken of the Sea Tilapia Select Fillets in Santa Fe Sauce and mix it with slightly warm rice.  Be sure to get out all the extra Santa Fe sauce and mix it with your rice for extra flavor.

2.) Cut avocado, tomato, cilantro, and slice lemon.

3.) Lay lettuce on a plate, and add tilapia mixture, avocado, tomato, and cilantro in the center.  Leave enough room to roll it shut and place a slice of lemon on the top to hold the two end of the lettuce together.  You can also use a toothpick, but the lemon gives it a good flavor and saves on a toothpick.

4.) Enjoy!

I rarely eat bread because it fills me up too quickly. I’m not fond of flavored tuna, but do enjoy the plain tuna in a lettuce wrap.
