I recently had the chance to try Fifty50 Foods, and I have to admit I was VERY surprised how great everything tasted. I was having a get together with a few friends and my cousin who has diabetes. I always feel bad because there are so many things she can’t eat, so I figured it would be the perfect time to put Fifty50 Foods to the test by making this Banana Applesauce Oat Bran Muffins recipe.

Ultimately, I was excited to have something made especially for her and the muffins were yummy. I was definitely impressed and so was everyone else – so much so that there were only two muffins left after everything was said and done, but not for long! Banana Applesauce Oat Bran Muffins

You need the following ingredients for these yummy banana oat bran muffins:

  • 2 1/4 cups oat bran
  • 1 cup Fifty50 Foods Hearty Cut Oatmeal (set aside 1/4 cup)
  • ½ cup Fifty50 Foods Fructose Granulated Sweetener
  • 1 tablespoon baking powder
  • 3/4 teaspoon cinnamon
  • 1/2 cup Fifty50 Foods Maple Syrup
  • 3/4 cups nonfat milk
  • 1/4 cup egg substitute
  • 2 tablespoons canola oil
  • 1 cup unsweetened applesauce
  • 1 banana (smashed)

Oat Bran Banana Applesauce Muffins

Directions for these yummy muffins:

  • Preheat oven to 350 and prepare muffin cups with cooking spray or line with paper cups.
  • Place oatmeal in large mixing bowl and pulse 15 times. Remove about 1/4 cup or so and set aside, we will use this to sprinkle on the top of the muffins before baking.
  • In a large mixing bowl combine the rest of the oats, oat bran, cinnamon, baking powder and fructose (add dry ingredients).
  • In a small bowl combine the remaining seven wet ingredients.
  • Combine the wet and dry ingredients and stir until combined.

  • Fill each muffin up until it’s almost full, sprinkle with the oats you set aside, drizzle a little bit of Fifty50 Foods Maple Syrup on the top of the muffins and bake for 17 to 20 minutes or until the tops of the muffins are browned.

  • Remove from oven and allow to cool.

These sound like they would be healthy and very delicious. I think they would be extra moist too with the banana and the applesauce in them.
