Green Pistachio Muffins Recipe Great for St. Patrick’s Day

Raise your hand if you are looking for an awesome Saint Patrick’s Day Recipe!  I know, I have not really posted many, it’s only because I knew I would be posting my Green Pistachio Muffin Recipe, and they are so much better than any green cupcake, or cake I have ever tasted!

I actually made these for the 2nd time the other day, and they are addicting, trust me.  It’s the pistachio, he could care less if they are green, or pink!

Saint Patrick’s Day Recipe: Green Pistachio Muffin Recipe

This yummy, crunchy muffin top and moist inside the green pistachio muffin has a great pistachio flavor, you are going to want to make these all year long!  They will be great pink for Easter and red for Christmas!  The top is nice and crunchy, and the inside is so soft with little pieces of pistachio!  Yummy, whether you are looking for a Saint Patrick’s Day Recipe or just a good Muffins Recipe you cannot go wrong with these.

Green Pistachio Muffin Recipe Ingredients

  • 1 box of instant pistachio pudding (3.4-ounce package)
  • 1 2/3 cups all-purpose flour
  • ¾ cups granulated sugar
  • ½ cups brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • Dash of sea salt
  • 2 eggs
  • 1 cup of milk
  • ½ cup vegetable oil
  • Food coloring (optional)
  • ½ teaspoon almond extract (can use vanilla extract)

Topping

  • AA Coarse Sugar (optional, but gives a good sweet flavor.)

Directions for this fabulous Green Pistachio Muffin Recipe

  • Preheat the oven to 375 degrees and prepare muffin pan.  I use the liners, because it’s easier, less messy, and makes them easier to store.
  • In a large mixing bowl mix all the dry ingredients – pudding, flour, granulated sugar, brown sugar, baking powder, baking soda, and sea salt.
  • In a different mixing bowl mix all the wet ingredients, medium mix eggs, almond extract, milk, and oil. Do not add food coloring yet
  • Combine wet and dry ingredients, and add 2 drops of food coloring.  Add 2 more drops at a time until you get the desired color.
  • Cover using AA Coarse Sugar I personally like to use a lot, it gives everything a really nice flavor and makes the top of the muffin a little crunchy which I like.
  • Fill the muffin cups and bake for 15-20 minutes, or until toothpick done.
  • Allow to cool and enjoy.

Another topping choice:

  • 2 tablespoons melted butter
  • ¼ sugar
  • 1/8 teaspoon pistachio flavor

Directions

  • After your muffins are cooked use a pastry brush to paint on the muffin topping.  Allow to cool, and enjoy!

Ingredients

I thought the same thing but it’s pretty yummy… I think it’s perfect with the muffin typically I don’t like muffins they are too sweet, these are perfect not sweet but on the top where you put the sugar….

I love these colorful looking muffins using pistachio pudding. I bet they taste moist from adding the pudding to these muffins. I would love to have these for St. Patrick’s Day!

Just when I think you can’t surprise me anymore you throw something like this in. You are so freakin creative and apparently a master of many things. This not only sounds delicious it also has health benefits. I do like pistachios but to be honest I like them more in something verses plain. I also love muffins, my grandson will b 5 on St. Patrick’s day so u have done all the hard work for me again. I love also that you don’t deleted posts on your blog because unfortunately I don’t have the best of luck with my old computers and if I lose something I just come back here. I don’t recall ever seeing such a good-looking muffin. I’ve never had the chance either to taste Pistachio other than ice cream. I’d like to make this muffins this week and deliver a few to family and friends. They would be thrilled with this St. Patrick’s Day treat.

Now this looks like a really yummy and easy recipe!!! I tried a new recipe tonight with corned beef, red potatoes and cabbage and it turned out absolutely HORRIBLE!! Hopefully this one is better.

This looks delicious!! The only other food that I know of that has pistachio nuts as an ingredient is pistachio ice cream. I cannot wait to try this, thank you for sharing this recipe.

Well these are just so perfect for St.Patty’s Day.I live near the little town of “Douglas” renouned for being the town of the leprechauns and each year on St.Patrick’s Day people gather from all around and bring food and deserts to dine and celebrate and drink green beer too.I would love to take these muffins and share the recipe with my fellow leprechauns this year.Thanks for sharing the recipe.
