I decided to go with something a little healthier this time around. While I do enjoy baking sweet treats, I have to say I impressed myself with this keto friendly sausage & veggie breakfast bake. Even my daughter liked it, well I’m assuming she did because she ate a big old burrito of it, lol.

Okay, the above picture I totally forgot to garnish with green onions, lol It’s not only prettier with the green onions it definitely adds flavor! Not a necessity, but definitely recommended.

Keto Friendly Sausage & Veggie Breakfast Bake

Ingredients

  • 6-7 Large Eggs
  • 1/2 Cup Milk
  • 8 Ounces Sausage
  • 2 Cups Pepper & Onion Blend (you can also use fresh bell peppers & onions)
  • 1 Jalapeno (chopped)
  • Fresh Mushrooms to your liking (chopped)
  • Fresh Spinach to your liking (chopped)
  • 1 Tablespoon Butter
  • 2 Cups Cheese
  • Seasonings to your liking (I used garlic salt, salt and pepper)
  • Green onions (chopped)

Instructions

  • Preheat oven to 350 degrees.
  • In a large bowl add eggs, milk, salt and pepper and whisk together completely.  Set aside.
  • Cook the sausage.  Once the sausage is cooked (do not drain grease), add sausage, pepper & onion blend, finely chopped jalapeno, chopped mushrooms, spinach, and butter and cook together on low for about 5 minutes.  Season to your liking.
  • Combine, eggs, sausage mixture, 1 cup cheese and mix.
  • Pour mixture into greased baking pan and bake for about 20 minutes or until done.
  • Add an additional 1 cup of cheese (or more if you like) to the top of the breakfast bake and cook for another 3-5 minutes or until the cheese is melted.
  • Garnish with green onion and enjoy.
