These Lemon Meringue Cookies are amazing! I am not a fan of Lemon Meringue on pies or lemon in tea, but these cookies are delicious. They are not what I thought they would be. They are better than what I thought they would taste.
They are pretty simple to make and take no time at all to prepare. They most time is the baking part, but oh so worth it. You can eat them with milk or any other drink that you choose. I pack up a few in a zip-lock baggy and take them on trips for the kids to snack on. My husband takes them to work and shares them at lunch time with his co-workers. He gets a lot of compliments about this cookies.
Simply follow the recipe for the Lemon Meringue Cookies and you will be amazed at how well they turn out. These cookies also make an excellent holiday cookie or even a cookie for a bridal shower or baby shower. I made these for my daughters baby shower, and when it was time to pack up and take everything home, there were not any of these cookies left to take back home.
This recipe below is so easy to follow that even the kids can help out with making these. They will enjoy it. My kids like making them into the shape of a star. They think it is the neatest thing ever.
Lemon Meringue Cookies Recipe

Ingredients
- 4 egg whites
- 1/4 tsp cream of tarter
- 1/2 C sugar
- 2/3 C powder sugar
- 1 TBSP lemon extract
- 1-3 drops of yellow food dye
Instructions
- Preheat the oven to 225 degrees
- In a standing mixer, add in the egg whites and cream of tarter.
- Mix on medium speed until soft peaks form and then increase to faster speed.
- Alternate between the sugar & powder sugar, add in 1 Tablespoon at a time until stiff peaks form.
- Add in the lemon and the food dye and mix until combined.
- Using a star tip pastry bag, pipe the meringues on a baking sheet lined with parchment paper.
- Bake for 1 hour
