Melting Snowman Chewy Sugar Christmas Cookie Recipe

Oh no, it’s that time of year. And, I think you are going to love this Melting Snowman Chewy Sugar Christmas Cookie recipe!  

I can’t wait to build our first snowman with the girls.  Mattie is finally big enough to really enjoy it. I can’t wait.  Even though our snowman will likely resemble the Melting Snowman Chewy Sugar Christmas Cookie Recipe we’re sharing with you today, like the cookie, building the snowman is easy and worth every minute I spend making them.  Plus, the Melting Snowman Sugar Cookies are super cute; unlike the snowman you build outside that melts, this melting snowman tastes great!

Melted Snowman Chewy Sugar Christmas Cookies

Melting Snowman Chewy Sugar Christmas Cookie Recipe

Ingredients:

  • 2 ¾ cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup butter (softened)
  • 1 ½ cups granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk (buttermilk works great, but I was out)
  • Reynolds Cookie Baking Sheets
  • Sugar Cookie Icing – colors depend on what you want to use, but you will need white to make the puddle of your snowman.  You can purchae it, or make your own.

Royal Icing Ingredients: 

I used store bought icing for this recipe.   However, I do generally make my own, so I wanted to share that recipe with you.  If you’re like me it’s probably rare you have icing from the store in the house, lol.

  • 2 egg whites
  • 1 C powder sugar
  • 1/2 tsp cream of tartar
  • 1 tsp vanilla
  • Black gel food coloring

Decorating your melting snowman:

  • Large marshmallows
  • Cookie icing – homemade or from store
  • Decorating icing use any colors you like
  • Sprinkles, M&M’s, or something to help make buttons and nose.

Sugar CookiesLet’s get to making these Melting Snowman Chewy Sugar Cookies:

  • Preheat oven to 350 degrees and prepare your cookie sheet with Reynolds Cookie Baking Sheets Paper.
  • In a small mixing bowl combine flour, baking powder, baking soda, and salt and combine well.
  • In a medium sized mixing bowl or using your KitchenAid mixer cream butter and sugar together until light and fluffy.  Beat in the egg and vanilla.  Then gradually blend in the dry ingredients, adding only enough milk to moisten the dough, so it’s soft.  Be careful not to add too much, it will make it too wet.
  • Roll each Roll rounded teaspoons of dough until balls, place on the cookie sheet with Reynolds Cookie Baking Sheets Parchment Paper on the sheet.  Spacing about an inch apart.  You can sprinkle a little extra sugar on top before baking, but I normally don’t because we’re going to using icing in a bit.
  • Place in the oven and bake for about 8 minutes or until lightly golden at the edges.  Remove from the oven and place on a cooling rack and allow to cool completely. Repeat steps until all dough are gone.

Storebought Icing:

If you choose to go with cookie icing from the store, like I did, be sure to pop it in the microwave for about 15 seconds to warm it up a bit.  It will make the icing easier to work with and spread out more evenly over the cookie. You can now skip to decorating your snowman cookie.

  • Separate the egg yolk from the whites. Put only the egg whites into a mixing bowl.
  • Stir in the sugar, cream of tartar and vanilla to the egg whites. Beat mixture on medium for about six minutes.
  • If the icing has the appearance of soup or is yellow in color, add more powder sugar, 1 cup.  Once the icing is finished, place it in a bowl.
  • Remove about icing you wish to keep white and color the rest using gel food coloring of your choice, stirring to mix in the color, and place into another piping bag with a #2 tip.

  • Make sure your working area is covered with clean Reynolds Cookie Baking Sheets.

  • When cookies are cool cover them with cookie icing & spread it all over the cookie, it’s okay to allow some to go over the edges.

  • You’ll need to slightly melt the marshmallow.  I do them one at a time by placing them in the microwave for about 5 seconds.  You’ll get the hang of it, just make sure you have a few to practice with.  When you remove them from the microwave and place marshmallow on cookie remember it’s okay if they don’t look perfect!

  • Draw your hands using black icing in the small tubes.
  • Use the same icing or if you have one you can use an edible decorating pen.  I did big smiles, some O’s, and stuff lol.
  • Add buttons using anything, I used Christmas sprinkles, but you can use whatever you like – frosting, M&M’s, etc.

  • Using frosting or even better if you have an orange sprinkle place it on the snowman’s face where his nose would go.
  • Use the decorating frosting drawn a scarf on your melting snowman.

Ingredients

  • Cookies:

  • 1/2 cup granulated sugar (for this recipe the granulated sugar is optional, I don’t use the granulated sugar for rolling the cookies for this recipe because after the finished

These are TOO adorable! They seem like a lot of work, (in the decorating), but that’s the really fun part, right? They sound delicious too, but it would be hard for me to eat them, they are so cute. Thanks for this! And also thanks to folks at Reynolds, this makes the clean up so easy!
