Moist Red Velvet Cupcakes Recipe

As you know cupcakes are one of my favorites.  My daughter Vayda has been learning to cook and she wanted to try and bake some red velvet cupcakes!  She’s a natural, we had a lot of fun and they came out looking pretty fabulous if I do say so.  I’m not trying to be snotty, she did most of the work, I got to sit back and supervise until it was time to put the frosting on.

Vayda almost flipped when I told her cocoa was in the recipe, lol.  I get that look at lot, but it’s a must have for these red velvet cupcakes.

I love a good moist cupcake and Vayda did a great job, these suckers are super yummy because they are perfectly moist.  Dang, one day she is going to be adjusting my recipes the way I do my moms and she will probably cook better than me too.  Oh, I’m having a mommy moment – I don’t want my babies to grow up.

I have always loved a good Red Velvet cake, so making these Red Velvet Cupcakes were fun to make.  My daughter and I both spent quality time together making them.  She is learning so much now in the kitchen.  I think she has the cupcakes down pat now that I have been making a lot of them lately.  She will be ready to go next year for 4-H with no help from mom.

The frosting is just as delicious.  The cream cheese frosting goes great with the Red Velvet.  Not only are these delicious, but they also display beautifully.  I have gotten a lot of compliments when making these.  I definitely recommend these for a delicious tasty treat.

I have had cupcakes that are dry and I am here to tell you that these cupcakes are definitely not dry at all.  They are moist and I am sure that you and your family will enjoy making these together.  You will enjoy eating them as well of course. 😉

RED VELVET CUPCAKES

Ingredients

  • Cupcake Recipe:
  • 2½ cups flour
  • 1 tbsp. cocoa powder
  • 1½ tsp. baking soda
  • ½ tsp. salt
  • ½ cup butter, soft, plus 4 tbsp.
  • ¼ cup softened shortening
  • 1 cup sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 TBSP Red Velvet extract
  • 1 cup milk
  • 1 tbsp. Red gel food color
  • Frosting Recipe:
  • 1 C unsalted butter, softened
  • 1 C cream cheese, softened
  • 2 tsp vanilla
  • 2 C powdered sugar

Instructions

Directions for the Velvet Batter: Preheat oven to 350 degrees. Line cupcake tins with paper liners. Sift flour, cocoa, baking soda, and salt all together. Mix the dry ingredients with a wire whisk for 3 minutes In a separate bowl use an electric mixer, beat butter, shortening &sugar; until it is light & creamy. Add the egg, vanilla, red velvet extract, and red gel food coloring. Mix well. Add flour mix and milk, 1/2 portion of each at a time, mix until completely combined. Spoon the batter into the lined cupcake tins until 2/3's filled. Bake at 350 degrees for 20-22 minutes or until an inserted toothpick comes out clean. Cool for 10 minutes Remove from cupcake tins to a wire rack until totally cooled. Directions for the Frosting: Cream the butter and cream cheese until creamy. Mix on low. Slowly add powdered sugar until blended. Add vanilla and beat until thoroughly combined. Scoop the frosting into a pastry bag with a large frosting tip. Twist the open end of the pastry bag to force the frosting to the tip. Frost the cupcakes working from the outside edge to the center of the cupcake.

Just wanted to stop by and let you know I used your cupcake recipe for our New Year’s Eve celebration and they turned out wonderful! They came out really moist and the frosting added the perfect touch. They were definitely a hit among out guests. They were super easy to make and you are right, they display beautifully!
