There is nothing more important than spending quality time with your family, unplugged, and at the dinner table. Having dinner as a family is a great way to bond, spend time with one another, and talk about everyone’s day, issues, smile, and laugh. Potato Soup – This is one of my favorite. Every single year since I can remember we have made Potato soup on Christmas Eve. It’s something my parents did with us, and we now do with our children. There is nothing like sharing a tradition.
My mom and I have the same potato soup recipe, but for some reason there is nothing like being home for mom’s potato soup lol. It’s comforting when I’m lucky enough to have my mom cook for me.
Easy Potato Soup Recipe
Something I have learned with this recipe is the more you change it, and make it your own by tasting it along the way the better it turns out. Maybe that is why my mom’s Potato Soup Recipe taste amazing… We both started with the same recipe, but she has had more time to make it hers lol…. Regardless it’s good, but I do suggest butter, salt, and pepper to taste… It’s really what gives it the yummy flavor…
Ingredients
- 10 McCain Potato’s
- 2 Medium Onions
- 1 Can Evaporated Milk
- 1/4 cup butter
Directions for this easy Potato Soup Recipe:
- Peel potatoes, and cube them
- Place them in large saucepan with Onion
- Add water almost to the top of the potatoes
- Bring to a boil, lower heat, cover and simmer for about 20 minutes or until everything is tender
- Add enough evaporated milk and butter and thin to your desired thickness
- Add salt and pepper… This is a must, add until you get your desired taste. It does take a lot of salt, typically I don’t cook with much salt… but I will when I make potato soup.
- Add extra butter if you think you need more.
You can also add carrots, celery, peas, ham, bacon, etc. If it sounds yummy you can add it, we just like ours plain.
If you don’t want to make potato soup you can also roast, steam, grill, or a number of other fabulous things with McCain potatoes…

I like the potato soup recipe because it is simple and easy to do with kids. Although my husband is on a low salt diet I do add more salt with potatoes because nothing else brings out the taste.
