These Peach Pina Colada Cupcakes are something new that we have tried at home. I am a fan of pina colada. I was excited to try making these and couldn’t wait to taste them. Can I just say DELICIOUS? I know I say that a lot about the cupcakes I post, but these are amazing.
The taste of peach is in the batter of the cupcakes. The peach taste and pina colada both are in the frosting. This way the pina colada is not overpowering the cupcakes themselves. This makes for one heck of a cupcake. I enjoy having a glass of milk with my Peach Pina Colada Cupcakes.
These cupcakes do not have an overpowering of sweetness in my opinion. The peach and pina colada together make these amazing cupcakes. As always, when I make cupcakes I get a lot of compliments. I received them with these cupcakes as well. My house was smelling so nice when I was baking these. The aroma was awesome. If you like peach flavoring and pina colada, then you will enjoy eating these cupcakes.

Ingredients
- 2 eggs
- 1 tsp vanilla
- 1/4 C buttermilk
- 1/4 C peach nectar
- 1 1/2 C flour
- 1 C sugar
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 C unsalted butter, room temp
- 1 C unsalted butter, room temp
- 4 C powder sugar
- 4 TBSP heavy whipping cream
- 1 tsp Peach extract
- 2 tsp Coconut Pina Colada mix
- Maraschino Cherries
Instructions
- Preheat oven 350 degrees and line cupcake tins with paper liners.
- Mix together flour, salt, and baking powder.
- In another bowl whisk the peach nectar and buttermilk.
- In a third bowl cream butter and sugar until light and fluffy.
- Add eggs and vanilla extract to the bowl (third bowl) with the butter.
- Beat until well incorporated.
- Add eggs, vanilla, and butter mixture to the peach nectar and buttermilk combination.
- Mix well.
- Add 1/2 of buttermilk combination with 1/2 of the flour mixture.
- Beat well.
- Add the remaining of the buttermilk combination to the above mixture, mixing well.
- Last add in the rest of the flour mixture and mix well.
- Scoop the batter into the lined cupcake tins until 3/4's way filled.
- Bake at 350 degrees for 20-25 minutes.
- Cool in cupcake pan for 10 minutes then remove cupcakes & place on a wire rack until cooled.
- Cream the butter and powder sugar until it looks light and creamy.
- If it doesn't cream, add the heavy whipping cream.
- Test to see if the frosting can form and hold a stiff peak.
- If not add more powder sugar 1/2 C at a time.
- Test to make sure that the frosting can make and hold a stiff peak.
- Add 1 tsp Peach Nectar
- Add 1 tsp Pina Colada mix.
- Mix to incorporate all ingredients.
- Scoop frosting into a pastry bag with a large frosting tip.
- Start at the outer edge of the cupcakes, frost in a circle until you reach the center of the cupcake. Add a maraschino cherry on top.
