I love the summertime and I love fun coming up with fun and nutritious summertime snacks, like these Peanut Butter and Jelly Protein Balls. My kids just love them and they are something I can feel good about making my kids. So much better than chips or some other unhealthy snack.
Peanut Butter and Jelly Protein Balls
To make these yummy Peanut Butter and Jelly Protein Balls you will need the following ingredients:
Peanut Butter
- ½ cup Gold Emblem Abound Creamy Peanut Butter (you can also use almond butter)
- ½ cup Gold Emblem Abound Steel Cut Oats
- ¼ Gold Emblem Abound Pure Organic Honey
- 1/2 teaspoon vanilla extract
- 1/3 cup vanilla protein powder (your favorite brand)
- 1/3 cup Gold Emblem Abound Raw Natural Almonds
- 3 tablespoons Gold Emblem Abound Organic Black Chia Seed
- 1 cup Gold Emblem Abound Strawberry Crisps
Strawberry
- ½ cup Gold Emblem Abound Creamy Peanut Butter (you can also use almond butter)
- ½ cup Gold Emblem Abound Steel Cut Oats
- ¼ Gold Emblem Abound Pure Organic Honey
- 1/2 teaspoon vanilla extract
- 1/3 cup vanilla protein powder (your favorite brand)
- ½ cup oats
- 1 cup strawberries
Okay, let’s get started on these yummy nutritious protein balls:
- Add peanut butter, honey, almonds, protein powder and chia seed in mixer and mix until everything is combined. Remove from mixer and sit aside for later.
- Add strawberries, peanut butter, protein powder and honey in a mixer and mix until everything is combined.
- Form into balls using 1/2 peanut butter mixture and ½ strawberry mixture.
You may have to use more or less peanut butter or honey. Just make sure you are able to form the mixture into a ball that doesn’t fall apart or crumble.
Enjoy your nutritious Peanut Butter & Jelly Protein Balls! They are an awesome summer snack and make a great snack for after school too!
Oh, and one more tip! Store your protein balls in the refrigerator or make a big batch and freeze some too! You should be able to store these in your refrigerator for about 1 week and in the freezer for about a month.
