Try this Pineapple Whoopie Pies recipe and you will be in heaven!  This recipe not hard to make.  It is pretty quite simple honestly.  They are amazingly delicious, though.  I have to warn you that you will not want to eat just one.  While a person shouldn’t eat a lot of sweets in one setting, I can not pass up the chance to eat a couple of these each time they are made here at home.  I do not get to make them as often as I like due to making so many other sweets, so yep two each time for me and I am good!

Pineapple Whoopie Pies Recipe

I make these Pineapple Whoopie Pies for my husband’s carry-ins at his place of employment.  When I do, everyone wants the recipe.  They beg him for me to make them for his carry-in.  I make these a couple times a year for home and a few times a year for his carry-ins as well.  If I had more time, I sure would make them more often.  They have Ghirardelli Chocolate in the recipe.  If you have had that brand before, then you know that these are delicious!

  • Pie Ingredients:
  • Duncan hines pineapple cake mix
  • 3/4 C water
  • 1/2 C oil
  • 3 Eggs
  • 1 bag of Ghirardelli white chocolate melting chips-Used for the Topping!
  • Frosting Ingredients:
  • 1/2 C unsalted sweet cream butter
  • 1 TBSP coconut extract
  • 2 C Powder Sugar
  • 1 TSP vanilla
  • 3-5 TBSP heavy whipping cream.


Pie Instructions:
    1. Preheat oven to 350 degrees
    2. Combine all ingredients, except the melting chips
    3. Do this in a mixing bowl with a hand mixer
    4. Mix until all is combined
    5. Place a piece of parchment paper onto a cookie sheet.
    6. Scoop some batter with an ice cream scooper on a cookie sheet
    7. Make them about 3 inches apart.
    8. Bake for 10 minutes.
    9. Pull out and let cool on cookie sheet for 5 minutes.
    10. Using a metal spatula, transfer the pies onto a plate to cool
    11. Then prep the frosting.
    12. While frosting is being made, in a double broiler, do the following.
    13. Melt the white chocolate melting chips and set aside.
Frosting Instructions:
  1. Combine all ingredients, except heavy cream, into a standing mixture.
  2. If the frosting looks like powdery pebbles, add the heavy cream.
  3. Once stiff peaks are formed, scoop frosting in a piping bag with a round tip.
  4. Pipe icing onto one side of the whoopie pie and place the other side on top.
  5. Using the melted white chocolate, drizzle onto the whoopie pies
  6. Grab a glass of milk or water and enjoy!
