I’m excited to share this quick and easy 5-minute burrito recipe with you!  I don’t know about you, but I am always on the lookout for easy lunch ideas for mom, especially now that the kids are back in school.  Only five minutes, is that awesome or what?  I sure think so, because not only is it a quick and easy lunch idea, but there is green chili on it and being from New Mexico I need my green chili, lol.  Oh, and it’s also become a favorite for a quick and easy dinner in our house.

The kids came home from school the other day, and I was eating lunch.  I totally spaced that it was a half day lol.  I had to share, and the kids loved them so much we made them for dinner and of course, if it has green chili my husband loves it, and I love that it is quick and easy for that night when I just can’t find the time to get everything done.

You’ll need:

  • Minute® Ready to Serve Rice
  • Green Chili
  • Pinto Beans
  • Cheese
  • Tortilla

Let’s make super yummy burritos in under 5 minutes:

  • Pop the Minute® Ready to Serve Rice into the microwave for 90 seconds.
Beans, Rice, Cheese, Green Chili Burrito
  • While rice is cooking cut up green chili and prepare everything to be combined with rice.
  • Put the desired amount of beans, cheese, and green chili into a bowl and add rice when it’s finished.

  • Leave it nice and hot so it warms up the beans and melts the cheese.

  • Toss it on a tortilla or eat it alone, it’s great either way.

Since September is the month we start changing our schedules because back to school season is upon us and fall is finally here I don’t know about you but I’m looking for something different, warmer, and more fall appropriate than the traditional sandwich for lunch.  Which is why I have fallen head over heels for Minute® Ready to Serve Rice!

See, Minute® Ready to Serve Rice, is just that, ready to serve after 90 seconds in the microwave.  You can add whatever you like to it, and it taste great.  Plus, it offers portability as well as portion control that makes it GREAT for any time of day.  My kids will make sweet rice in the mornings and eat it in the car when we’re running late, I love it any time of day and have added all sorts of different things.  It just depends on what I am in the mood for.

Ingredients

  • Green Chili
  • Pinto Beans
  • Cheese
  • Tortilla
  • Minute® Ready to Serve Rice

Instructions

  1. Pop the Minute® Ready to Serve Rice into the microwave for one minute.
  2. While rice is cooking prepare green chili and anything else you plan on adding to the rice so you can combine it quickly while the rice is still hot.
  3. Place desired amount of beans, cheese, and green chili into a bowl and add rice when it’s finished. Leave it nice and hot so it warms up the beans and melts the cheese.
  4. Toss it on a tortilla or eat it alone, it’s great either way.

Those look so good. I really stink at cooking rice so I usually use the bags that you microwave. I will definitely have to try these because they would be perfect for going to work or school!
