If you love quick, easy, green chili and cornbread, you’ll love this fabulous recipe for Quick & Easy New Mexico Green Chili Cornbread Muffins!
I almost always have Martha White® baking mixes on hand because muffins are easy breakfast for the kids that I can still have fun with or just have a little fun creating something new. However, until recently I had not tried Marth White® cornbread mix. I picked it up while at Kroger and decided to give it a try and add a little taste of New Mexico to it, which, of course, is green chili. If you haven’t had green chili cornbread, you are seriously missing out.
Typically I make cornbread from scratch because I’m picky, and my husband is even worse when it comes to cornbread and tons of other stuff but we’ll save that for another post, lol. I didn’t tell my husband I used a mix to make the cornbread because I wanted to see if he noticed. He didn’t say anything, but he ate two cornbread muffins with dinner and two more for a snack during the day. I think it’s safe to say he liked them, and I didn’t tell him it came from a mix, not because he would be upset but I’m okay with him thinking I spent a lot more time than I did making dinner, lol. Hey, we all deserve that every now right!
- 1 package Marth White® Cornbread
- 2/3 cup milk as directed on Martha White® packaging
- 1 -2 cups green chili (we used extra hot because that’s how we roll in New Mexico, but you can use whatever your taste buds can handle.)
1.) Combine milk and cornbread mix as directed on the back of Martha White® cornbread mix.
2.) Cut green chili and add it to your cornbread mixture.
3.) I used cupcake liners for my muffins because it makes washing the pan easy, lol. I know it’s horrible, but the truth. Fill muffin liners almost to the top and bake on 350 for about 20 minutes or until golden brown and toothpick done.
