Red Hot Kiss Cupcake

Ingredients

  • White Cupcake Ingredients:
  • 1/2 C butter, room temp
  • 2 egg whites
  • 2 eggs
  • 2 C flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 3/4 C whole milk
  • 1 1/2 C sugar
  • 2 tsp vanilla extract
  • 1 C Red Hot Candies, coarsely crushed
  • Frosting:
  • 1 C soft unsalted butter
  • 4 + C powder sugar
  • 4 TBSP heavy whipping cream
  • 1 1/2 tsp vanilla extract
  • 2 tsp cinnamon extract
  • Red gel food coloring

Instructions

White Cupcake Directions:

  1. Preheat the oven to 350 degrees. Line the cupcake pan with paper liners.
  2. Using a medium bowl, whisk flour, baking powder, salt, and baking soda.
  3. In a separate large mixing bowl, beat butter with an electric mixer or kitchen aid on medium to high for 30 seconds.
  4. Now add sugar and vanilla to the butter and beat until combined.
  5. Add egg whites and eggs one at a time, beating well after each addition.
  6. Alternate the flour mixture and milk-to-butter mixture, beating on a low speed until everything is well mixed.
  7. Add the crushed red hot candies.
  8. Fill the cupcake pan liners 2/3 with cake batter
  9. Bake at 350 degrees for 20–24 minutes.
  10. Remove the the cupcakes from the pan and allow them to cool on a wire rack for 30 minutes before frosting.

Frosting Directions:

  1. Cream the butter and powdered sugar until it looks light and creamy.
  2. If it doesn't cream, add several drops of the heavy whipping cream until it creams.
  3. Test to see if frosting can form and hold a stiff peak by taking a spoonful of frosting and turning the spoon upside down. If the frosting stays on the spoon, it is ready;; if not,, then...
  4. Add more powder sugar,, 1/2 cup at a time, and mix well.
  5. Add the vanilla extract. Mix using your mixer until all ingredients are completely mixed.
  6. Next,, add the cinnamon extract, stirring to mix well.
  7. Divide the frosting into two bowls.  The first bowl of frosting stays white,, while the second bowl.
  8. Add the red gel food coloring to this frosting. Again, mix well to blend the red color throughout the bowl of frosting.
  9. When ready,, scoop the white frosting into the side of apastry bag with a large tip.
  10. Scoop the red frosting into the same pastry bag on the other side of the bag.
  11. Twist the open end of the pastry bag to push the frosting to the tip to make sure that the colors
  12. have intertwined.
  13. Begin frosting the cupcake on the outside edge,, then work to the center of the cupcake.
