Ingredients

  • Cookie Ingredients:
  • 5 C flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 1/2 C soft unsalted butter
  • 2 C granulated sugar
  • 4 eggs
  • Royal Icing:
  • 2 egg whites
  • 1 C powdered sugar
  • 1/2 tsp cream of tartar
  • Ivory & black gel food coloring

Instructions

Cookie Directions:

Cream the soft butter with the sugar until the combination is smooth and not grainy to the touch in a mixing bowl.

Add all 4 eggs at a time. Continue to mix.

Add the vanilla. Continue mixing.

Sift the flour, baking powder, and salt together.

Add the dry mixture to the wet mixture.

Continue mixing to make sure all ingredients are thoroughly blended.

Put the dough into a ball and wrap it in cling wrap, completely covering the entire dough ball.

Put it in the refrigerator for about 6 hours or overnight. Check to see if the dough is firm.

Preheat the oven to 325 degrees.

Pull the cookie dough out of the refrigerator and sit it out to soften up a bit.

Put flour out on the wood cutting board, rub flour on the rolling pin, and work some flour into the batter.

Roll the dough out on the cutting board and, using your cookie cutter, begin to make your cookies.

Line the cookie sheet with parchment paper.

Using a metal spatula, move the cut cookie to the parchment-lined cookie sheet.

Bake at 325 degrees for 8 minutes. Check to see if the cookies are thoroughly baked.

Take the cookies off of the cookie sheet and put them on a wire rack to cool completely. (about 10 minutes).

Icing Directions:

Combine all ingredients in a mixing bowl, mixing on medium speed for 4 minutes. (except your food coloring.)

If the icing is not stiff enough, add 1/4 cup powdered sugar.

Leave the icing in a large bowl. Take out 2 bowls, put 3/4 of the icing in the first bowl, and add several drops of ivory gel food coloring. Mix well.

Put the remaining icing in the second bowl, adding several drops of black gel food coloring. Mix well to blend the black color throughout the entire bowl of icing.

Spoon each of these two bowls of icings into individual frosting bags with #5 tips. Twist the open end of the bag to push the icing to the tip.

Basic Icing Directions:

The first step for each of the gingerbread men is to outline it in ivory. Allow 30 seconds for the outlining to dry.

Add water to some of the base icing mix (1 tsp) and mix it in. Use this icing to fill in the cookie.

Leave some of the ivory icing in the pastry bag for use later.

Using a butter knife, spread it from the outlined part inwards to the center.

Spooky Zombie:

Allow the ivory gingerbread man to dry before beginning to add it to his suit.

Following the picture of the cookie, outline the suit in black and fill in the outlined V-neck suit with black icing as well.

Add a tie around the gingerbread man’s neck. The suit should reach to the edge of his hands and feet, which you will leave ivory.

Add ivory pinstripes to the black suit. Add a black, thin belt in the middle of the gingerbread man.

Add two thick dots for the eyes.

Add two thick ivory small dots for the nose, then top the two dots off with two black smaller dots.

For the mouth, draw a half circle from one ear to the other ear in black.

Add 5 small, short lines across the half circle.

Allow the icing to dry for 5–10 hours.
