I’m going to be honest, I’m not biting on sweet potatoes, I made these because my daughter wanted me to make them. And to my surprise, I don’t mind sweet potatoes so much when it’s in something sweet like these cupcakes, and I’m sure I’ll love them in cookies too! I’ve always loved sweet potato pie, but never really thought of the fact that it is made using sweet potatoes lol. Crazy right.
I will always remember my mom’s sweet potato pies. Vayda wanted me to try and make sweet potato cupcakes because we both love grandma’s pie so much. Yes, that is when it hit me! OMG, that pie is made out of sweet potatoes, lol. I’ve never had to make it because my mom is the pie maker, nobody can make a pie like my mom! Since Vayda and I both wanted to try and make something a little different, I agreed to give the cupcakes a try. I wanted to try something different for my family gathering. I hope that they enjoy them as much as my children and my husband do.
Vayda loved them so much she took a few with her to school so she could share them with her friends. Yes, Vayda is just like her grandma she loves sweet potato everything.
Vayda came home and said she gave two cupcakes to hear teachers who loved them and a few to her friends and she was a little upset that two of her friends didn’t like them, lol. I think she took it a bit too personal so I talked to her about us all being different and liking different things, and it made her feel better. Tweens can be so sensitive about stuff. She was upset that someone didn’t like the cupcakes lol. Poor girl, I did explain to her that they are not chocolate you can’t expect everyone to love them lol. Hey, it’s true, and it put a smile on her face!
With Thanksgiving sneaking up on us I thought it would be a good time to share this recipe with you! I don’t know if you are looking for a new cupcake recipe to add to your dessert table or if you just want to try something new and little different but either way, I hope you and your family love this recipe more than Vayda’s two friends lol. My husband and kids loved the frosting on the cupcakes. It was a bit sweet for me personally, but then again I always take off half of the icing when I eat a cupcake. I love cupcakes, but the icing is often too much for me. This is also great without any icing! That’s how I liked them, but everyone is different play with this recipe. Ingredients
- Cupcake Ingredients:
- 2 C flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 sticks unsalted butter, room temp
- 1 1/2 C sugar
- 3 eggs, room temp
- 1 can sweet potatoes, mashed
- 1/2 tsp vanilla
- Cream Cheese Frosting Ingredients:
- 8 ounce cream cheese, room temp
- 2/3 C unsalted butter, room temp
- 2 TBSP whole milk
- 8 C powder sugar
Instructions
- Cupcake Instructions:
- Preheat oven to 350 degrees.
- Line cupcake tins with paper liners.
- Mix flour, baking powder, cinnamon, baking soda, & salt together in a bowl.
- With an electric mixer on medium to heat beat flour mixture for 30 seconds.
- Add sugar and beat on high speed until light and fluffy, about 2 minutes.
- Add eggs, one at a time, beat on low speed after each addition
- Add sweet potatoes and vanilla, beating until combined.
- Add flour mixture; beat until combined (batter will be thick).
- Scoop batter into cupcake paper liners until 3/4 full.
- Bake at 350 degrees
- Do this for 20-25 minutes or until an inserted toothpick comes out clean.
- Allow to cool for 10 minutes while in the cupcake pan.
- Remove from the cupcake pan placing on a wire rack until completely cool.
- Cream Cheese Frosting Instructions:
- Beat butter & cream cheese on medium for 30 seconds with an electric mixer.
- Pour in the milk beating until just combined.
- Add in powdered sugar, 1/2 cup at a time, until smooth.
- If too runny add more powdered sugar again 1/2 cup at a time.
- Scoop into a pastry bag with a large round tip to frost.
- Start on the outside edge of cupcake working toward center of the cupcake.
