Pig Of The Month sent such a wide variety I had a hard decision on which to eat first. We ended up eating the Cattle King Sweet & Smoky ribs first and we added a little Key West Bold and Spicy Citrus Grilling Sauce. The ribs were absolutely delicious and the best part is I didn’t have to slave over a hot grill all day to smoke them. I just heated the ribs in the oven with foil covering them according to the directions and we could set down to dinner in less than an hour.
Next I wanted to try the Applewood Smoked Bacon wrapped around a Chicken Breast with a whole lot of Love Me tender BBQ Sauce on the side. Served with fresh vegetables makes for a hearty lip smacking meal. Fixing the bacon wrapped chicken breast is real simple. Lay down about three pieces of bacon one way then lay two more down the other way. Place chicken is the center, add some cheese and wrap the bacon around the chicken. Bake at 400° for about 45 minutes, turning it over about halfway through.
Then turn the oven up to 500° or broil (watch closely!!) to brown the bacon and make it crispy. You can turn the chicken over again to make sure all the bacon is cooked. I found this recipe on Pinterest which was submitted by Artsy Fartsy Mama.

I was so excited about fixing this chicken that I forgot to take pictures using Pig of the Month Applewood Bacon so I just used Artsy Fartsy Mama’s picture of putting the cheese in the bacon and wrapping it up.
