I suggest that you try these Amazing German Chocolate Cupcakes. They are scrumptious. They are not as messy as the normal German Chocolate Cake is either. While my husband is not too fond of German Chocolate cakes, he loves these cupcakes. I really like these as well. They are so moist and instead of the coconut and pecan mixture on the whole cupcake, it is in the center of the icing. That is what makes this cupcake less messy to eat.
Who cares right? As long as it tastes good, it doesn’t matter if its messy does it?

I am making these for the local school bake sale that they are having coming up. I always attend with the kids and we have a great time. We play games and go to each classroom, where they have different sales and games going on. It is such a great time of year.
I enjoy supporting my daughter’s school. This is a great way to give back for all that they do. It helps with activities so that the kids can participate and goes right back into the school. Ingredients
- 1 C flour
- ½ C brown sugar, packed
- 1/3 C sugar
- 1/3 C cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp sea salt
- 1/3 C milk
- 1 egg
- 1 tsp vanilla
- 1/3 C hot water
- ¼ C low fat sour cream
- 1/4 C evaporated milk
- 1 large egg yolk
- 1/4 C brown sugar
- 1/4 C unsalted salted butter
- 1/2 tsp vanilla
- 1/2 C sweetened shredded coconut
- 1/4 C chopped pecans
- 2 1/2 C powder sugar
- 1/2 cupcake cocoa powder
- 1 C unsalted sweet cream butter
- 3-5 TBSP heavy whipping cream
- 1 t vanilla
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix the following with a spoon.
- Flour, brown sugar, granulated sugar, cocoa powder, baking powder, baking soda and salt
- Add in milk, egg, & vanilla.
- Beat with an hand mixer on low speed for 1 1/2 minutes.
- Add the hot water and stir until combined.
- Add in sour cream and mix until combined.
- Fill paper lined muffin cups 3/4 full.
- Bake in the oven for 21 minutes.
- Remove from oven and allow to cool several minutes in muffin pan.
- Then transfer to a wire rack to cool completely.
- In a medium saucepan combine the following.
- Evaporated milk, egg yolk, brown sugar and butter.
- Cook mixture over medium heat, stirring constantly, until thickened.
- About 15 minutes (mixture will come to a light boil, and when mixing it you should see the bottom for a moment).
- Remove from heat.
- Stir in vanilla then add in shredded coconut and chopped pecans.
- Mix and then set aside to cool.
- Add all the ingredients into a standing mixer bowl or medium bowl.
- Cream together
- If frosting looks like rocks, add in 2 more tbsp heavy cream.
- Once the frosting is stiff enough pipe a small circle onto the cupcake
- Leave an opening in the center for the coconut and pecan mixture.
- Put a dollop of the coconut pecan mixture into the center and enjoy!
