White Chocolate Cupcakes Stuffed with Red Velvet Oreo Cookies

If there is a favorite cookie in our house it’s definitely OREO! We’ve also had fun with our OREO cookies in tons of different ways, but this is the first time we’ve had White Chocolate Cupcakes Stuffed with Red Velvet OREO Cookies!  Which if you were to ask my youngest daughter she would say they were SUPER YUM!  My husband fell head over heels for the Red Velvet OREO, but preferred them the old fashion way – dunked in milk!  He has never been much for cupcakes, but he does LOVE it when we make our OREO Stuffed Brownie Recipe, lol.  I guess it’s the chocoholic in him!

White Chocolate Cupcake Stuffed With Red Velvet OREOsWhite Chocolate Cupcakes Stuffed with Red Velvet Oreo Cookies

  • 1 ½ cups flour
  • 1 cup sugar
  • ½ tsp salt
  • 2 eggs (4 egg whites)
  • ½ cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 2/4 cup coconut milk (you can use any other milk you choose)
  • 4 ounces white chocolate (melted)
  • 1 Package Red Velvet Oreo Cookies

White Chocolate Frosting

  • 4 Ounces of White Chocolate
  • 8 Ounces of cream cheese
  • ½ unsalted butter (softened)
  • 1 tsp vanilla
  • 4 cups of powdered sugar (sifted)

Directions for White Chocolate Cupcakes

  • Preheat oven to 325°.
  • Prepare cupcake pan with liners.
  • Melt white chocolate (You can do this in microwave in 10-second increments, be sure to stir between each increment until it’s a nice smooth consistency).
  • Sift together the flour, baking powder and salt in a large mixing bowl.
  • In a separate bowl cream butter and sugar.  Adding eggs one at a time and mixing after each.
  • Add vanilla, coconut milk, and white chocolate (melted) and mix until combined.
  • Slowly add dry ingredients and mix completely.

  • Place Red Velvet Oreo Cookie on the bottom of each cupcake liner.

  • Cover each cookie with batter filling about 2/3 of the way full.
  • Place cupcakes in oven, and bake for about 13 to 17 minutes or until toothpick done.
  • Allow to cool before frosting.
  • Frost cupcakes
  • Optional – Place Red Velvet Oreo Cookie into frosting on top of cupcake.

White Chocolate Frosting Directions

  • Melt white chocolate (you can do this the same way you melted the white chocolate for the cupcakes).
  • Combine cream cheese and butter and beat together.
  • Add vanilla and melted white chocolate.
  • Add powder sugar and mix well (add powder sugar slowly while mixing until all powder sugar is added and it’s combined thoroughly).
