Things would be a huge mess, but it’s not something we stop and think about as much as we should. After watching the awesome video series “1 in one hundred million” by Kronos, I can honestly say I have put more thought into the role we all play in the world. I have more appreciate for people and the jobs they do because without these jobs things would not work the way they do now. It’s honestly kind of scary to think about what would happen without these people in our community.

I watched all the videos several weeks ago, with the expectation of Episode 14 with Mike Perez the Sous Chef at Hearty Boy Catering in Chicago, which had turned out to be one of my favorites. I think we have all made some mistake in our lives or someone at some point has taken a chance on us. Fingers crossed we are all as smart and want to do good as Mike Perez. When I worked at the bank I always tried to give people chances; you know that person that comes in for their interview and is just taking a chance? Which has honestly turned out to be a positive thing more often than it’s turned out badly. Besides, who am I to criticize someone because of their past, the way they dress, what they have and have not been taught, where they are from, race, or anything else? Someone took the chance with me at one point. I’m thankful someone noticed something in me that I didn’t even know was there because it changed my life, where I was going and who I wanted to become.
The video of Mike Perez is inspirational and proof that we CAN turn things around if we just put ourselves out there and take a chance. Mike Perez is a 44-year-old Sous Chef for Hearty Boys Caterers. What’s a Sous Chef? They are the second to the chef and responsible for everything from prepping all the food for an event to slicing and dicing. Mike is a very talented and hardworking man who can do it all.
Mike also chefs the off-site catering and from time to time he works in the line from The Heart Boys restaurant that caters a wide variety of events from Bat Mitzvahs and weddings to dinner parties and holiday events where anywhere from 30 to 1,030 people attend events.
Mike was hired as part of a program that 330 people applied for and was one of 20 who were chosen for the program. Dan is the co-founder of Hearty Boys and has even helped to encourage Mike to pursue his own produce business, which Mike did and now has 15 restaurants as customers for his fresh produce. Is that awesome or what? It’s amazing what determination and a loving hand can do for a person who is willing to step up to the plate.
