Christmas is my favorite time of the year!  Not just because the Christmas trees and Santa, but because of the fact that all the family gathers on Christmas, to share love and food.  Well, when it comes to the holiday food, I have to say, if you’re trying to stay healthy for the holidays, you’re in a big trouble.

Starting from pies, cakes, puddings, tarts, cookies, candy, sweets and many many different kinds of desserts, Christmas is loaded with unhealthy carbs.

Because of that, I decided to step up this year, and try to make a healthier holiday treat.  One that looks, feels and tastes like Christmas, but is still healthy, clean and fitness friendly.  And that’s how I made my Christmas protein pancakes.

Not only that my pancakes turned out to be delicious and creamy as heaven, they ended up having awesome nutrition targets.  Starting from the fact that they are diabetics, heart and health friendly, they also are Paleo and vegetarian.  Nut free, gluten free and sugar-free, these yummy Christmas delights are the best!  They contain only 254 calories per serving, and that is pretty amazing, considering the fact that 7 American pancakes have twice the calories per serving.

In other words, they are a real nutrition bomb, packed as a present under your Christmas tree.

Christmas Protein Pancakes

Ingredients

  • Pancakes:
  • 1 large banana
  • 2 egg whites
  • 1 whole egg
  • 4 tablespoons coconut flour (1/4 cup)
  • 4 tablespoons blended raspberries (1/4 cup)
  • 1 tablespoon olive oil
  • 1 can coconut milk
  • 3 tablespoons protein powder
  • 1 tablespoon honey (organic, raw, unprocessed)
  • 1 tablespoon cocoa
  • 1/2 tablespoon water

Instructions

  1. Blend the raspberries nicely until they turn into a puree.
  2. Add the rest of the ingredients into a blender: the banana, egg, egg whites, coconut flour and the olive oil.
  3. Blend for 1 minute, or until you make sure the ingredients have transformed to a homogeneous mixture (thick, but pourable).
  4. Heat a frying pan on medium temperature and start making the pancakes - when they start getting bubbles, it’s time to flip them (the smaller the pancakes the easier to flip).
  5. Separate the coconut milk from the coconut water, and pour the milk in a mixing bowl.
  6. Start mixing on medium speed and after a minute start add the protein powder one tablespoon at a time, without stopping the mixer.
  7. Mix until you get smooth and creamy mixture.
  8. Crease the whipped cream onto each pancake, arranging them one on top of the other.
  9. Mix the cocoa, honey and water in a small bowl with a tablespoon until you get homogeneous mixture.
  10. Splash the dressing over your pancakes and add a tablespoon of whipped cream in the middle.
  11. You can pour a few tablespoons of the blended fresh raspberry mixture to make a nice finish.
