There is nothing better than an action-packed meal that is full of flavor and doesn’t take a long time to make. What also makes it better is not having a million dishes to clean up or having my food stick to the bottom of my pans. That is seriously the worst. I have started cooking a lot with my cast iron skillet. There are two reasons why I love to use a cast iron pan when I am cooking. Number one is that nothing will stick to it AND it is super easy to clean (okay, maybe three reasons, but who is counting). The second reason is because a cast iron pan is seasoned, so it picks up on a ton of flavors and locks them in. Anything cooked in a cast iron pan is pretty much perfection, and you can’t really mess it up.

In this recipe, I am combining our meat and veggies all in one pan. I try and cook very simple while having a ton of flavor and a full meal. My kids love this meal and it is so filling. This dish goes great with a side salad and fresh garlic bread. My Citrus Chicken Cast Iron Skillet is perfect for any weeknight meal and can be dressed up enough for a delicious weekend meal for date night.
Citrus Chicken Cast Iron Skillet Recipe
This recipe is very simple and only uses a few ingredients!

- 3-4 large chicken breasts
- 3 tbsp.Olive Oil
- Salt and pepper to your taste
- 2 tbsp. Citrus seasoning
- 2 Yellow squash, sliced
- 2 Zucchini, sliced
- 3 Small Potatoes, sliced
- 3 limes
- Parsley for garnish
It is so easy to make this and it is all cooked in one pan. Here is how to cook it!
- In a large sealed tight container add your chicken breasts. 1/2 of a freshly squeezed lime juice and citrus seasonings let refrigerate for 2 hours. In cast iron skillet add 3 tbsp. of olive oil and place on your stovetop at medium heat to high heat. Once the oil is bubbling add your chicken breasts cook on high for 5 minutes until the breasts look crispy then rotate and cook for another 5 minutes. Now reduce your heat to medium and cook on both sides for 12 minutes each to ensure it’s completely cooked. Pull the chicken out and place on the side
- Add your sliced yellow squash, potatoes, and zucchini slices to the cast iron add your 1 tbsp.of citrus seasoning and salt and pepper to taste.Cook on medium heat till tender and juicy. Turn off your heat on your stovetop and place the chicken back in the skillet.Garnish with Parsley and lime wedges. Note: You can also bake in the oven at 250 degrees for 5 to 10 minutes to get that extra crisp taste.

This chicken sounds amazing!! I love using citrus with chicken, it makes it so tasty! I also love the idea of this being in “all-in-one” meal, perfect for busy families! I will definitely give this a try, thanks for sharing! 🙂
