There is something about the holiday season! I love spending time with good friends and family, baking, decorations and enjoying the holiday season. Since my sister is living with us for a bit I’ve been able to spend more time baking, which is GREAT! She loves to cook, but can’t bake to save her life.. It’s perfect, because I would rather bake anyday of the week, and with it being cold outside there is nothing like warming the house with the wonderful scents of sweet treats.
This coconut brownie recipe with cocoa almonds is awesome. We actually make it several times a year, because my husband loves it. It taste similar to his favorite candy bar, but we can control the amount of coconut. Anyway, here it is. I sure hope you enjoy it as much as we do.
Coconut Chocolate Brownies Recipe with Cocoa Almonds
If you’re looking for something a little different, yet totally yummy this holiday season you can’t go wrong with the Coconut Chocolate Brownies recipe with Cocoa Almonds!
Ingredients
You don’t have to use this homemade brownie recipe if you don’t want.. You can always add your favorite boxed brownies and save time. They still taste great, I just prefer homemade if I have the time.
Brownies Recipe
- 9 tbs of butter
- 4 to 5 cups of semi-sweet chocolate chips
- 1 cup of light brown sugar
- 1 tsp vanilla extract
- 4 eggs
- ¼ cup of water
- 1 ½ cups of flour
- ½ tsp baking soda
- 1 package Planters Cocoa Almonds
Coconut, Almond & Chocolate Layer
- 1-3 cups of coconut (I would have liked to add more, but my husband will only eat it if I put a little..:()
- ½ cup of whole Planters Cocoa Almonds
- 2 cups chocolate chips
Prepare brownies as follows
- Preheat oven to 350 & prepare your brownie dish (9×13 inch baking pan)
- In a medium saucepan add the butter and chocolate chips, over medium-low heat melt them stirring often. Once everything is melted remove from heat.
- Pour into a large mixing bowl, add eggs, whisking after adding each egg, add vanilla, water and mix until combined.
- Pour brownie mixture into pan and sprinkle coconut on the top. You can add more or less to taste.
- Planters Cocoa Almonds, more or less to taste.
- Melt 1/2 cup of chocolate chips and lightly pour on the top of the uncooked brownie mixture.
- Bake for 25 to 30 minutes or until done.
- Remove from oven and drizzle remainder of chocolate chips on top and allow to cool.
TIP – Add more Planters Cocoa Almonds on the top by placing a handful into a baggie and crushing the almonds. I found the smaller they are crushed, the better flavor it has because everything was just combined great. Maybe, it’s just me, lol. Regardless they were a huge hit and super easy to make. You could also use a brownie mix and make things super easy.
As a child, I would cry if I knew nuts were in something, LOL. Looking back I was just being a brat and making this difficult because I honestly liked peanuts, haha. I know that sounds horrible, and I’m going to be. I am not the only child who did this now and again just to be a brat. However, I am glad I got over my “disliking” for nuts because I would have missed out on all the awesome Mr. Peanut Planters amazing new line of Holiday themed nut collection, which are all fabulous. I only was required to purchase one package of them, but I bought four because they are AWESOME!
We have a lot of holiday gatherings coming up and there are currently 7 people living in my home so it’s nice to have things that you can grab a handful, eat, not feel too guilty, and not be left feeling like you’re still hungry. Rather than snacking on too many sweets, my sister and I have been keeping Planters Holiday line out, so we can grab a handful as we like. It’s so much better than that cookie, but has just enough sweet or salty flavor to leave you feeling satisfied. Oh, and they’re also going to make a great addition to my holiday gatherings, dont you think?
I often split it half and half because the kids and I like more coconut… Oh, and I added the cocoa almonds this time and not the regular, which is awesome because I love all the amazing holiday nuts from Planters. Oh, man they have a GREAT line of:
