I’m SO EXCITED! My new football pan came in today. I had one, but I don’t know what happened to it when my sister moved out. I think it accidentally got put with her things, so I just bought a new one for the upcoming Super Bowl and, of course, I’ll use it next year.
Oh, did I tell you the cupcakes only have two ingredients? That makes it a great idea for your Super Bowl party because everyone will think you spent a lot more time on it than you did. I am planning on doing one thing different when the Super Bowl comes around, and that is adding the team colors of the team we end up rooting for. Enough chatting. Pineapple Angel Food Cupcakes with Pineapple Glaze
To make the Pineapple Angel Food Cupcakes with Pineapple Glaze, you will need the following ingredients:
Pineapple Angel Food Cake
- 1 box angel food cake
- 1 6-ounce can of 100% DOLE® Canned Pineapple Juice (replace water with pineapple juice)
Pineapple Glaze
- 1/3 cup butter, softened
- 2 to 2 1/2 cups powdered sugar
- 1 to 2 tablespoons pineapple juice
- Coconut (optional)
- Cherries (optional)

Pineapple Angel Food Cake:
- Mix cake according to directions on the box. Rather than adding water, add pineapple juice.
- Bake according to directions.
Pineapple Frosting:
- In a medium-sized mixing bowl, cream butter with your electric mixer.
- Gradually add powdered sugar to creamed butter, and use a mixer to cream powdered sugar and butter together.
Add 100% DOLE® Canned Pineapple Juice, and mix completely
- Drizzle or brush on your cupcake, and garnish with a cherry and sprinkles of coconut.
I didn’t add the coconut because my daughter tossed it in the trash on accident. Yes, things like this always happen at my house. Lol.
Besides, it still looks pretty delicious, don’t you think? And yes, it is as delicious as it looks. I’m making myself hungry for another Pineapple Angel Food Cupcake with Pineapple Glaze! Only this time, I’m not going to skip out on the coconut, because that would have been the perfect final touch for both looks and taste!
Since I didn’t have my football pan, I decided to play around with a few different shapes, other than the cupcakes. I made hearts, which turned out pretty neat, and, of course, they tasted fabulous and the kids loved them. I also had fun with food coloring just to see how the cake would take the food coloring before I make it for the Super Bowl.
I think it is safe to say it takes the food coloring rather well, right? I love the way it looks. It makes me wish my team was pink and blue. Lol. If you couldn’t tell by my blog, they’re two of my favorite colors, but I was not the one responsible for choosing the colors this time. Nope, my daughter realized I was playing with food coloring and decided she wanted to help, which is why the cake is bright pink and blue. It looks pretty awesome, and I like it in the wine glass. It could be another fun idea for your Super Bowl gathering or any other gathering for that matter.
